We all know shrubs are great in beverages, but if you’re looking for more uses of shrub turn to your kitchen. Shrubs can create sweet and savory marinades that will give your dinner dishes a makeover.

Whether you realized it or not, you probably already marinate your food before you cook them. A marinade is simply a mixture of seasonings that are used to flavor or tenderize food.

So, what makes shrubs so good for marinating? The main ingredient in a shrub is vinegar. Vinegar is an acid and acids cause foods to be broken down and tenderized. The sugar of the shrub helps the food to taste sweet, but also helps the food to not absorb too much vinegar. This creates a flavorful, yet juicy entrée. Be careful not to use too much vinegar as that can cause your dish to become mushy and won’t be as tasty.

Marinades can be used on anything. Chicken, steak, shrimp, even vegetables! If you want to impress your guests at your next dinner party, consider using a marinade. Your friends and family are going to think they’re eating a five-star meal when all it may have taken was 5 simple ingredients.

To incorporate shrub into any recipe, simply replace any acid, such as lemon juice, vinegars, or wine. This will add the acid needed to marinade the food but will also pack in the flavor. To round out dinner, create side dishes that will pair with the shrub flavor to create a well-balanced and dynamic meal.

Here are some of our favorite marinades using Anna’s Kitchen Shrub:

Banana Marinade

2 cups Banana Turmeric Shrub
2 cups coconut milk
shrimp or chicken 

Cranberry Marinade

2 cups Cranberry Mint Shrub
1/2 cup olive oil
1 shallot minced
salt and pepper to taste
your choice of protein, but we recommend pork or lamb

Peach Jalapeño Marinade

2 cups Peach Jalapeño Shrub
2 cups olive oil
1 lime
2 garlic cloves minced
your choice of protein, but we recommend chicken or pork
